I am a huge breakfast person. I typically wake up extremely hungry – when I was little, I remember staying home from school at least once because I was positive that I had the stomach flu, only to discover a few hours later, after eating breakfast, that I was just super ridiculously hungry.
Since then, I’ve learned that my body needs a big, nutritious breakfast to make it through the day. A bowl of cereal and milk simply doesn’t cut it for this girl! Luckily, I think breakfast food is the best. Omelettes? Delicious. Smoothies? Delicious. Granola? Delicious. Scones? Super delicious.
… you get the picture.
Since I’m at home for a few days between interim and second semester, I am making full use of a real kitchen to make myself super tasty breakfasts. Last night, I made Dark Chocolate Raspberry Oatmeal Banana Bread from The Ambitious Kitchen and it is awesome. Not only that, but the ingredient list is simple (we had everything on hand) and makes the recipe something that can be enjoyed everyday. After trying the first loaf, my family went back and made two more loaves the same night. Winner!
This morning, it was my stomach that woke me up. I enjoyed two slices of this bread as I assembled my main breakfast.
.. okay, I woke up at 11. It was definitely brunch.
The texture of this bread makes it taste so hearty and delicious! My mom thought that it tasted “healthy but delicious”, whereas I just thought it was plain delicious. (Then again, I’m the type of person who puts spinach in her smoothies). Nonetheless, we all love it.
I made my first successful omelette this morning while watching yet another episode of Glee on Netflix. (Usually, my “omelettes” turn into scrambled eggs). I used one egg, two egg whites, leftover ham, pepperjack cheese, spinach, peppers, and salt & pepper.
I have this problem where I always try to stuff too many toppings into everything. My friends always laugh at my overflowing salads, and how the cafeteria workers can never fully wrap my tortilla-sandwiches because I try to put way too much inside. It’s messy, and it’s delicious. I’m not going to try to change.
Next week is one of my best friends’ birthday, so I am off to wrap her birthday present before driving to meet her for dinner tonight. On the way, I’m hoping to stop at Gap and return some of the clothes I had ordered that don’t fit quite right – including a gorgeous blue winter dress! Such a bummer. Have a happy Saturday!

My favorite meal of the day is usually dinner because that is when I have the most time to put forth toward cooking. But I must admit, I have had some really great breakfasts lately, too!
I love love love breakfast, and I’m the same way about omelettes and salads with overstuffing/filling them. That omelette looks SO good too, by the way, mmmmmm

I absolutely love breakfast.I think it’s so weird that everyone in my family can just skip it with no problem. My favorite, though, is having breakfast for dinner since I’m too hungry in the morning to really make it fancy, especially when I’m just serving myself!

I don’t think i can pick a favorite, I love all the meals. Haha. But lately I’ve been having breakfast for dinner and lunch.
I adore breakfast foods, but I prefer to eat them at dinner time. Breakfast for dinner is a favorite for me. During college, me & my 2 best friends would have breakfast for dinner every Sunday night. It is one of my favorite memories – we would make all kinds of breakfast casseroles…breakfast pizza…homemade cinnamon rolls…waffles….cheese grits, etc! It was delicious and made for such a fun night.
Those meals look delicious! I love breakfast too. It’s funny because when I was little, I never liked it but now I like to eat right when I get up. My favorite meal of the day definitely depends on the day. When I’m going out to dinner, that is my favorite meal but most days I’d say breakfast is my favorite meal!
I’m totally with you. I need breakfast within about 15 minutes of waking up. My brother says he feels nauseous if he eats in the morning – that blows my mind, because it’s the complete opposite for me!
